Peanut butter iced coffee

Peanut butter, in coffee, over ice. Do not knock it.

Nutty, sweet and thicker than it has any right to be. Morning Roundup already tastes of toasted pecan — this just leans in.

What you need

  • 2 tbsp smooth peanut butter
  • 1 tbsp honey or maple syrup
  • 1 shot Western Tamp Morning Roundup, brewed as espresso or very strong
  • 120ml milk
  • Ice, as much as the glass will take

How to make it

  1. Melt the peanut butter into the hot coffee

Peanut butter, honey and the hot shot in a jug, stirred until completely smooth. This only works while the coffee is hot — do it cold and you get lumps you will never get rid of.

  2. Into the glass

Pour the mixture into your serving glass.

  3. Add the milk

Half a cup, mixed through properly.

  4. Ice last, then stir again

Fill with ice and give it one more stir. It thickens as it chills.

Why it works

Fat and salt are both flavour carriers, and peanut butter brings plenty of each. The salt in particular suppresses bitterness, so a light-medium roast comes across sweeter and nuttier than it does black.

Worth knowing

  • Smooth, not crunchy — crunchy blocks the straw and never fully blends.
  • A frother makes this considerably better.
  • Stir thoroughly. Lumps are the only way this goes wrong.
